The best omelet ever!

While on the subject of fridge leftovers...
here are the bits and pieces I used to make this omelet:

*purple onion
*tiny yellow tomatoes
*roasted hatch chili peppers
*eggs
*pepper-jack cheese
*salt
*pepper
*olive oil
*orange

Here we go... ready? It's fast...

01. check out my rules on frying at the beginning of this post

02. start pre-heating your frying pan (use a small one for a small omelet)

03. slice up what ever veggies you will put inside the omelet; I used the veggies from the list above

04. when you're ready, dump the veggies onto the frying pan and pour a bit of olive oil over them; stir, cover, and move on










05.  break 3 eggs into a bowl . add a tiny bit of water . add a little bit of salt and pepper . break everything up with a whisk and mix together

06.  by now your veggies should be nicely sauteed

07.  remove cover, add a bit of salt and pepper, stir again

08. pour the eggs over the veggies and slowly start moving everything around, scraping the bottom well with a soft spatula


09.  when the mix gets sort of cooked together, but still wet enough so that it sticks together, cover and wait a bit (do not stir till everything is dry, because your omelet will not stick together and will fall apart, plus, it won't taste as good)
(meanwhile, heat up another frying pan if you want to make things easy for yourself, if not, you'll just have to flip the omelet onto this one when you're ready; make sure not to put the olive oil onto the new frying pan until you're ready to transfer the omelet)



11. now that you have a bit of time, slice up an orange and place on a dish

12.  after a bit of time (it's a gut thing... use a clear lid if you have to)  uncover the omelet and check that it is done on the bottom .  flip the frying pan over the other one and the omelet should fall out onto the new frying pan, which will be by now nice and hot.

13.  again, wait till the other side of the omelet is done and flip again over your dish .

14.  shred the pepper-jack cheese over omelet .  DONE

Quick. Healthy. Delicious!
